About This Job

Overview  

Seeking an experienced Curry Chef specializing in South Indian cuisine to lead preparation and execution of authentic dishes in a busy kitchen. Must deliver consistent quality, manage kitchen operations, and contribute to menu development.

Key Responsibilities

- Prepare and cook a wide range of South Indian curries, dosas, idli/dosa batter, chutneys, sambar, biryanis, and accompaniments to authentic standards.

- Oversee daily kitchen operations, including mise en place, portion control, stock rotation, and food safety compliance.

- Manage inventory: order ingredients, monitor supply levels, and minimize waste while maintaining cost targets.

- Lead and train junior kitchen staff and line cooks on recipes, techniques, plating, and hygiene practices.

- Maintain consistency in flavor profiles, presentation, and service timing during peak and off-peak periods.

- Collaborate with management on menu planning, seasonal specials, and adapting recipes for local tastes and dietary requirements.

- Ensure compliance with health and safety regulations, sanitation standards, and allergen controls.

- Quality control: perform regular taste checks, monitor customer feedback, and implement improvements.

- Assist with scheduling and kitchen workflow to ensure efficient service and timely delivery.

Skills and Qualifications

- Proven experience (mid-senior level) as a chef focused on South Indian cuisine with a strong portfolio of dishes.

- Solid knowledge of South Indian spices, cooking techniques, batter fermentation, and traditional recipes.

- Basic to intermediate English communication skills sufficient for following instructions and supervising staff.

- Culinary qualification or relevant apprenticeship preferred; formal training in Indian cookery is an advantage.

- Strong organizational skills, time management, and ability to work under pressure in a fast-paced environment.

- Experience with inventory management, portion control, and cost-conscious food preparation.

- Leadership experience with the ability to train, motivate, and manage a small kitchen team.

- Commitment to high standards of cleanliness, food safety, and customer satisfaction.

- Flexibility with working hours, including evenings and weekends, and readiness to work onsite.
