Overview
Lead preparation and production of high-quality meals in a commercial kitchen, ensuring consistency, food safety, and efficient operation. Supervise kitchen staff, manage inventory, and contribute to menu planning and cost control.
Key Responsibilities
- Menu planning & recipe development: Create, standardize, and update menus and recipes to meet nutritional, cost, and seasonal requirements.
- Food preparation & cooking: Oversee and participate in daily preparation, cooking, plating, and presentation to maintain quality and consistency.
- Kitchen leadership & supervision: Train, mentor, schedule, and evaluate kitchen team members; delegate tasks and maintain a productive, respectful work environment.
- Quality control & standards: Enforce portion control, recipe adherence, taste testing, and presentation standards.
- Food safety & hygiene: Maintain HACCP/food safety procedures, ensure proper storage, sanitation, and compliance with local regulations.
- Inventory & cost management: Monitor stock levels, order supplies, minimize waste, control food costs and assist with budgeting.
- Equipment & facility maintenance: Ensure proper use and basic maintenance of kitchen equipment; coordinate repairs as needed.
- Operational efficiency: Streamline kitchen workflows, coordinate with other departments, and adapt to service volume fluctuations.
- Reporting & documentation: Maintain records for inventory, food temperatures, waste, staff attendance, and other required logs.
Skills and Qualifications
- Education: Certificate or diploma in Culinary Arts or related qualification preferred.
- Experience: Several years of professional kitchen experience with at least mid-senior level/lead cook responsibilities.
- Food safety certification: Valid HACCP or equivalent food safety certification.
- Technical skills: Strong cooking techniques across multiple cuisines, recipe costing, menu development, and kitchen equipment proficiency.
- Leadership: Demonstrated ability to manage and motivate a team, resolve conflicts, and maintain high performance under pressure.
- Organizational skills: Excellent time management, multitasking, and inventory control capabilities.
- Communication: Professional working proficiency in English; clear, concise communication with staff and management.
- Physical requirements: Ability to work standing for long periods, lift kitchen supplies, and work flexible hours including early mornings, evenings, and weekends.
- Attributes: Attention to detail, strong food quality focus, creative problem-solving, and commitment to maintaining a safe, hygienic kitchen.
